Candela Prol, DipWSET, CWE, AS, Instructor

Candela Prol has 20 years experience working in the wine industry, though she began her career in the kitchen, graduating Cum Laude from Johnson & Wales University’s Culinary Arts College and working several years as a cook and pastry chef in Rhode Island.

Candela was the sommelier at Pier House Hotel, the wine director and educator of Louie’s Backyard Restaurant, both in Key West, Fla. and a consultant for Fatfish Restaurant in Bayshore, N.Y.

She was a sales representative for the North Fork, Long Island wineries Lenz, Palmer and Paumanok, a contributing editor to Food & Wine Magazine’s Wine Guide 2000 and is the buyer of Spanish wines for Marble Hill Cellars. She had a long-standing affiliation with retailer Astor Wines & Spirits in New York City and currently is the wine educator for Chambers Street Wines.

At International Wine Center, Candela teaches the WSET® Level 2 Intermediate Course, as well as the WSET Level 3 Advanced Course and WSET Level 4 Diploma classes specializing in Spain and Portugal. She teaches cheese and beverage pairing at Artisanal Cheese Center and has taught the Wine Sensory Evaluation Course for the Department of Hospitality at the New York School of Technology.

Candela holds the WSET® Advanced Certificate with Distinction and earned the WSET® Diploma in 1997. She is a Certified Wine Educator through the Society of Wine Educators and holds certificates in wine, beer and cheese from the Spanish Wine Academy, the Siebel Institute of Technology, the Napa Valley Wine Alliance Academy and Artisanal Cheese Center. She also holds a degree in anthropology from the New School.
